Ingredients

1 lb ground beef

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup ranch dressing

1 cup crushed tortilla chips

1 can (15 oz) black beans, rinsed and drained

1 small red onion, diced

1/2 cup tomatoes, diced

1/4 cup chopped fresh cilantro

1 package of mini phyllo pastry cups (or wonton wrappers)

Optional: sliced jalapeños for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Meat: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it into crumbles. Drain excess fat.

Season the Meat: Stir in the taco seasoning with the recommended water amount as per the packet. Cook for an additional 5 minutes until well combined and heated through.

Prepare the Cups: If using wonton wrappers, lightly grease a muffin tin and press the wrappers into the cups to form a shell. Bake for 8-10 minutes until they are golden and crispy. If using phyllo pastry cups, simply remove them from the packaging.

Assemble the Bites: Once the meat is ready, start layering: spoon a tablespoon of taco meat into each pastry cup. Then add a layer of black beans and diced red onion.

Add Cheese & Ranch: Top each bite generously with shredded cheddar cheese and a drizzle of ranch dressing.

Finish Baking: Place the assembled cups back in the oven for about 5-7 minutes until the cheese is melted and bubbly.

Garnish: Remove from the oven and top each bite with fresh diced tomatoes, cilantro, and optional jalapeño slices for added spice.

Serve: Allow to cool slightly and serve warm. Enjoy your Taco Ranch Bites!
