Ingredients

2 large flour tortillas

1 cup refried beans

1 cup cooked ground beef (or substitute with black beans for a vegetarian option)

1 tablespoon taco seasoning

1 cup pizza sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup diced tomatoes

¼ cup chopped green onions

1 small can sliced black olives (drained)

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Cooking oil spray

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Meat: In a skillet over medium heat, combine the cooked ground beef with taco seasoning. Stir well and heat until warmed through.

Assemble the Pizza Base: Lightly spray a baking sheet with cooking oil. Place one flour tortilla on the baking sheet. Spread half of the refried beans evenly over the tortilla, followed by half of the seasoned ground beef.

Add Sauce and Cheese: Spread a layer of pizza sauce over the beef, then sprinkle with half of the cheddar and mozzarella cheese.

Top It Off: Place the second tortilla on top, and repeat the layering process: spread the remaining refried beans, ground beef, pizza sauce, and the remaining cheese.

Bake the Pizza: Place the assembled Mexican pizza in the oven and bake for about 15-20 minutes, or until the cheese is bubbly and slightly golden.

Add Fresh Toppings: Once out of the oven, sprinkle the diced tomatoes, chopped green onions, and sliced black olives on top. You can also add fresh cilantro if desired.

Slice and Serve: Allow the pizza to cool for a couple of minutes before slicing into wedges. Serve with a dollop of sour cream on the side for a delicious finishing touch!
