Ingredients

For the Brownie Base:

1 cup unsalted butter (2 sticks)

1 1/4 cups granulated sugar

1 cup packed brown sugar

4 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

For the Peanut Butter Swirl:

1 cup creamy peanut butter

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (or as needed for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Make the Brownie Base:

      - In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in both sugars until well combined.

        - Allow the mixture to cool slightly, then whisk in the eggs and vanilla extract until fully incorporated.

          - In a separate bowl, mix together the flour, cocoa powder, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips.

            Prepare the Peanut Butter Swirl:

              - In a mixing bowl, combine the peanut butter, powdered sugar, vanilla extract, and enough milk to achieve a smooth, spreadable consistency. Mix well until combined.

                Swirl the Mixtures:

                  - Using a cookie scoop or tablespoon, drop spoonfuls of the brownie batter onto the prepared baking sheets, leaving space for the cookies to spread.

                    - Add a dollop of the peanut butter mixture on top of each brownie batter scoop.

                      - Use a toothpick or a knife to gently swirl the peanut butter into the brownie batter without fully mixing them.

                        Bake:

                          - Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are slightly soft.

                            - Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

                              Serve and Enjoy:

                                - Once cooled, serve these decadent swirled brownie cookies fresh or store in an airtight container for up to a week.
