4-5 lbs pork shoulder (also known as pork butt)

1 tablespoon olive oil

1 large onion, finely chopped

4 cloves garlic, minced

1 cup apple cider vinegar

1 cup ketchup

1/2 cup brown sugar

1/4 cup honey

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon smoked paprika

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust to taste)

8-10 hamburger buns

Prep the Pork: Rinse the pork shoulder under cold water and pat it dry with paper towels. Trim excess fat if necessary, leaving some for moisture and flavor.

    Sear the Meat: In a large skillet or pot, heat the olive oil over medium-high heat. Season the pork shoulder with salt and black pepper, then sear it in the hot oil for about 2-3 minutes on each side until browned. Remove the pork from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté for 5-7 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Make the BBQ Sauce: In a mixing bowl, whisk together the apple cider vinegar, ketchup, brown sugar, honey, Worcestershire sauce, Dijon mustard, smoked paprika, chili powder, ground cumin, cayenne pepper, and a pinch of salt and pepper.

          Combine in Slow Cooker: Place the seared pork shoulder in a slow cooker. Pour the BBQ sauce mixture over the pork, ensuring it’s well coated.

            Cook the Pork: Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-6 hours, until the pork is fork-tender and easily shreds apart.

              Shred the Pork: Once cooked, remove the pork shoulder from the slow cooker and place it into a large bowl. Using two forks, shred the pork into bite-sized pieces, discarding any large pieces of fat.

                Mix it Up: Return the shredded pork to the slow cooker and mix it with the remaining sauce. Let it sit for an additional 10-15 minutes on low for the flavors to meld together.

                  Serve: Toast the hamburger buns lightly if desired. Pile generous portions of the sweet and tangy pulled pork onto each bun. Top with coleslaw if you like, for an extra crunch and flavor punch.
