2 (14 oz) cans young green jackfruit in water or brine (not syrup)

1 tablespoon olive oil

1 large onion, diced

4 cloves garlic, minced

1 cup BBQ sauce (store-bought or homemade)

2 tablespoons apple cider vinegar

1 tablespoon maple syrup or agave nectar

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

1 teaspoon chili powder (optional for spiciness)

Burger buns or tortillas for serving

Fresh coleslaw (optional, for topping)

Prepare the Jackfruit: Drain and rinse the jackfruit. Cut off the hard core pieces and discard. Shred the jackfruit with your hands or using two forks until it resembles pulled meat.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 5-7 minutes until translucent. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Jackfruit: Stir in the shredded jackfruit and mix well with the onion and garlic. Cook for about 5 minutes, stirring occasionally to let the jackfruit absorb the flavors.

        Mix in the Sauces and Spices: In a small bowl, combine the BBQ sauce, apple cider vinegar, maple syrup, smoked paprika, cumin, onion powder, black pepper, salt, and chili powder (if using). Pour this mixture over the jackfruit and stir to ensure all pieces are coated evenly.
