Ingredients

1 lb thick-cut bacon

1 cup brown sugar, packed

2 tablespoons maple syrup

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon sea salt

1/2 teaspoon ground cinnamon (optional)

Parchment paper for lining baking sheet

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Spice Mixture: In a medium bowl, combine the brown sugar, cayenne pepper, smoked paprika, black pepper, sea salt, and ground cinnamon (if using). Mix until well combined.

Dunk the Bacon: Take each slice of thick-cut bacon and dip it into the maple syrup, allowing any excess to drip off. Then, dredge it thoroughly in the spice mixture, pressing gently to ensure the sugar adheres well.

Arrange on Baking Sheet: Place the coated bacon slices on the prepared baking sheet in a single layer. Make sure they don't overlap to ensure even cooking and caramelization.

Bake the Bacon: Bake in the preheated oven for 25-30 minutes, or until the bacon is caramelized and crispy. Keep an eye on it in the last few minutes to prevent burning. You want a beautiful golden color!

Cool and Serve: Remove the baking sheet from the oven and let the bacon cool for about 5-10 minutes. It will continue to caramelize and harden as it cools. Once cooled, break the slices apart if they have stuck together, and serve immediately.

Store Extras: If you have leftovers (which is a big if!), store the candied bacon in an airtight container in the refrigerator for up to one week. Reheat in the oven for a few minutes to crisp again.
