Sweet Potato Pie

2 medium sweet potatoes (about 2 cups mashed)

3/4 cup brown sugar (packed)

1/2 cup granulated sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 teaspoon vanilla extract

3 large eggs

1 1/2 cups evaporated milk

1 refrigerated pie crust (or homemade, if preferred)

Instructions
 

Preheat your oven to 375°F (190°C).

    Boil the sweet potatoes in a large pot of water until tender, about 30-40 minutes. Drain them and let cool.

      Once cool, peel the sweet potatoes and mash them in a large mixing bowl until smooth.

        Add the brown sugar, granulated sugar, salt, cinnamon, nutmeg, ginger, vanilla extract, and eggs to the bowl. Mix well until all ingredients are fully combined.

          Gradually stir in the evaporated milk until the mixture is smooth and creamy.

            Place the refrigerated pie crust in a 9-inch pie pan, crimping the edges as desired.

              Pour the sweet potato filling into the prepared crust, spreading it evenly.

                Bake the pie in the preheated oven for about 45-50 minutes, or until the filling is set and a toothpick inserted comes out clean.

                  Allow the pie to cool on a wire rack for at least 2 hours before serving. This will help the filling set even further.

                    Serve slices of pie warm or chilled, optionally with whipped cream on top.
