Sweet Potato Pie

A delightful twist on a classic dish.

Ingredients
  

2 large sweet potatoes (about 2 pounds)

1 cup sugar (you can adjust to taste)

1/2 cup brown sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

4 large eggs

1 cup evaporated milk

1 tablespoon butter, melted

1 pre-made pie crust (or homemade if preferred)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and peel the sweet potatoes. Cut them into chunks and place them in a pot filled with water.

      Boil the sweet potatoes for about 20-25 minutes, or until they are fork-tender. Drain and allow to cool slightly.

        In a large mixing bowl, mash the sweet potatoes until smooth.

          Add the sugar, brown sugar, salt, cinnamon, nutmeg, vanilla extract, and melted butter. Mix well until fully combined.

            Beat in the eggs one at a time, mixing well after each addition.

              Gradually stir in the evaporated milk until the filling is smooth and creamy.

                Pour the sweet potato filling into the pre-made pie crust and smooth the top with a spatula.

                  Bake in the preheated oven for 45-50 minutes, or until the filling is set and a knife inserted into the center comes out clean.

                    Allow the pie to cool on a wire rack. Refrigerate for at least 2 hours before serving to enhance the flavors.
