1 medium head of green cabbage, finely shredded

1 large onion, diced

2 cloves garlic, minced

1/4 cup apple cider vinegar

1/2 cup brown sugar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for heat)

1/2 cup diced tomatoes (fresh or canned, drained if canned)

1/4 cup raisins (optional for added sweetness)

Fresh parsley for garnish (optional)

Sauté the Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and sauté for an additional minute until fragrant.

    Add the Cabbage: Gradually add the shredded cabbage to the skillet. Stir well to combine with the onions and garlic. Cook for about 5-7 minutes, stirring occasionally, until the cabbage begins to wilt and soften.

      Prepare the Sauce: In a small bowl, whisk together the apple cider vinegar, brown sugar, soy sauce, salt, black pepper, and crushed red pepper flakes (if using). Pour this mixture over the cabbage in the skillet.

        Mix in the Remaining Ingredients: Add the diced tomatoes and raisins (if using) to the skillet. Stir everything together to ensure the cabbage is well-coated with the sweet and sour sauce.

          Cook Down: Reduce the heat to low, cover the skillet, and let it simmer for about 10-15 minutes. Stir occasionally, allowing the cabbage to absorb the flavors and soften further.
