3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Bananas and Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well mixed, then add the brown sugar, beaten egg, and vanilla extract. Mix until smooth.
