Ingredients

For the crust:

1 cup all-purpose flour

1/2 cup unsalted butter, melted

1/4 cup powdered sugar

1/4 teaspoon salt

For the lemon filling:

1 cup granulated sugar

1/4 cup all-purpose flour

2 large eggs

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

Powdered sugar for dusting (optional)

Instructions

Preheat your oven: Start by preheating your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

Prepare the crust: In a medium bowl, combine 1 cup of flour, melted butter, 1/4 cup powdered sugar, and salt. Mix until well combined and forms a soft dough. Press the mixture evenly into the bottom of the prepared pan to create a crust.

Bake the crust: Bake the crust in the preheated oven for about 15 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.

Make the lemon filling: In a large mixing bowl, whisk together 1 cup of granulated sugar and 1/4 cup of flour until well combined. Add in the eggs, fresh lemon juice, and lemon zest. Whisk until the mixture is smooth and no lumps remain.

Pour and bake: Pour the lemon filling over the baked crust, smoothing it out with a spatula. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden on the edges.

Cool and dust: Once baked, remove from the oven and let it cool in the pan. Once cooled to room temperature, dust the top with powdered sugar if desired.

Slice and serve: Cut into squares or bars and serve. Enjoy the tangy sweetness of your super easy lemon bars!
