For the Sugar Cookie Base:

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract (optional)

For the Cream Cheese Filling:

2 (8 oz) packages cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

¼ cup sour cream

1 tablespoon lemon juice

For the Topping:

1 cup colorful sprinkles

Whipped cream for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.

    Make the Sugar Cookie Base: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream the softened butter and sugar together with an electric mixer until light and fluffy. Add in the egg, vanilla, and almond extract, mixing until well combined. Gradually add the dry ingredients to the wet mixture and stir until fully incorporated.

      Press into the Pan: Spread the sugar cookie dough into the bottom of the prepared baking pan, pressing it down firmly to create an even layer.

        Prepare the Cream Cheese Filling: In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the sugar and continue mixing. Add the vanilla extract, eggs (one at a time), sour cream, and lemon juice, mixing until the mixture is creamy and well blended.

          Layer the Filling: Pour the cream cheese filling over the sugar cookie base, spreading it evenly with a spatula.

            Bake: Bake the bars in the preheated oven for 30-35 minutes, or until the edges are lightly golden and the center is only slightly jiggly.

              Cool and Chill: Allow the bars to cool in the pan on a wire rack for about 1 hour. Then, transfer them to the refrigerator to chill for at least 3 hours, or overnight if possible, to set properly.

                Serve: Once chilled, lift the bars out of the pan using the overhanging parchment paper. Cut into squares or rectangles. If desired, top each bar with whipped cream and a sprinkle of colorful sprinkles.
