2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, diced

1 can (15 oz) corn kernels, drained

1/2 cup mayonnaise

1/2 cup crumbled cotija cheese

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper, to taste

1/4 cup diced red onion

1 avocado, sliced (optional)

Hot sauce, for drizzling (optional)

Marinate the Chicken: In a mixing bowl, combine the diced chicken thighs with chili powder, smoked paprika, salt, and pepper. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Corn Mixture: In another bowl, mix the drained corn, mayonnaise, cotija cheese, lime juice, and half of the chopped cilantro. Stir well until combined. Set aside.
