For the Crust:

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

For the Strawberry Swirl:

1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 teaspoon lemon zest

Instructions
 

Prepare the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are fully coated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool while you prepare the filling.

          Make the Strawberry Swirl:

            - In a small saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook for about 5-7 minutes until the strawberries soften.

              - Mash the mixture with a fork or potato masher until you achieve a smooth sauce consistency. Remove from heat and let cool.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese until smooth and creamy (about 2-3 minutes).

                    - Add the sugar and vanilla extract, blending until well combined.

                      - Add the eggs, one at a time, mixing well after each addition. Be careful not to overmix.

                        - Fold in the sour cream and lemon zest until fully incorporated.

                          Combine:

                            - Pour the cheesecake filling over the cooled crust in the springform pan.

                              - Using a spoon, dollop the strawberry swirl sauce over the top of the cheesecake filling. Use a skewer or butter knife to gently swirl the strawberry mixture into the cheesecake for a marbled effect.

                                Bake the Cheesecake:

                                  - Bake in the preheated oven for 55-65 minutes, or until the edges are set but the center is slightly jiggly.

                                    - Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.

                                      Chill:

                                        - Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight to set completely.

                                          Serve:
