Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup crushed freeze-dried strawberries

30 chocolate-covered strawberry candies (or chocolate kisses)

Additional sugar for rolling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and light, about 3-5 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

Incorporate Strawberries: Gently fold in the crushed freeze-dried strawberries until evenly distributed throughout the dough.

Shape and Roll Balls: Using a cookie scoop or your hands, form the dough into 1-inch balls. Roll each ball in additional sugar to coat.

Arrange on Baking Sheets: Place the sugar-coated balls onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

Press in Chocolate: Once out of the oven, immediately press a chocolate-covered strawberry candy or a chocolate kiss into the center of each cookie.

Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
