Ingredients

1 cup water

1/2 cup unsalted butter, diced

1/4 teaspoon salt

1 cup all-purpose flour

1/2 teaspoon baking powder

4 large eggs

1/2 teaspoon vanilla extract

Oil for frying

For the Strawberry Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

1/4 cup fresh strawberries, pureed

Instructions

Prepare the Dough:

In a medium saucepan, combine water, butter, and salt. Bring to a rolling boil over medium heat. Stir in the flour and baking powder until the mixture forms a ball and pulls away from the sides of the pan (about 1-2 minutes). Remove from heat and let cool for 5 minutes.

      Add Eggs:

Once cooled, add eggs one at a time, mixing well after each addition until fully incorporated. Stir in vanilla extract until the batter is smooth and glossy.

          Pipe the Crullers:

Fill a pastry bag fitted with a large star tip with the dough. Preheat oil in a deep fryer or large pot to 350°F (175°C). Pipe 4-5 inch rings onto parchment paper, using scissors to cut the dough. Carefully place them into the hot oil.

              Fry the Crullers:

Fry the crullers for about 2-3 minutes on each side, or until they turn golden brown. Remove them with a slotted spoon and drain on paper towels.

                  Prepare the Strawberry Glaze:

In a small bowl, combine powdered sugar, milk, vanilla extract, and pureed strawberries. Mix until smooth. Adjust consistency with more milk if necessary; it should be thick but pourable.

                      Glaze the Crullers:

Once the crullers have cooled slightly, dip the top in the strawberry glaze, allowing excess to drip off. Place on a rack to let the glaze set.

                          Serve:

These delightful crullers are best served fresh and warm. Enjoy your delicious Strawberry Glazed French Crullers with a cup of coffee or tea!
