Ingredients
  

For the Crullers:

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

4 large eggs

1 teaspoon vanilla extract

1/4 teaspoon nutmeg (optional)

For the Strawberry Glaze:

1 cup powdered sugar

2 tablespoons fresh strawberry puree (about 2-3 strawberries)

1 teaspoon milk (adjust for consistency)

1/2 teaspoon vanilla extract

A pinch of salt

For Frying:

Vegetable oil, for frying

Instructions
 

Prepare the Cruller Dough:

    - In a medium saucepan, combine water and butter. Heat over medium until the butter melts completely.

      - Add the flour and salt to the saucepan, and stir vigorously with a wooden spoon until the mixture pulls away from the sides and forms a ball. This should take about 2-3 minutes.

        - Remove from heat and let it cool for about 5 minutes.

          - Once cooled, add eggs one at a time, mixing well after each addition until the batter is smooth. Stir in the vanilla extract and nutmeg (if using).

            Pipe the Crullers:

              - Prepare a piping bag fitted with a large star tip. Transfer the cooled dough into the piping bag.

                - Line two baking sheets with parchment paper. Pipe 4-inch long strips, twisting to create a ring shape, onto the parchment.

                  Heat the Oil:

                    - In a large, heavy-bottomed pot, heat 2-3 inches of vegetable oil to 375°F (190°C).

                      Fry the Crullers:

                        - Carefully drop in the piped crullers in batches, without overcrowding the pot. Fry each side for 2-3 minutes, or until golden brown and puffed. Use a slotted spoon to remove them from the oil and transfer to a wire rack to drain.

                          Make the Strawberry Glaze:

                            - In a mixing bowl, whisk together powdered sugar, strawberry puree, milk, and vanilla extract until smooth. Adjust the milk to reach your desired glaze consistency.

                              Glaze the Crullers:

                                - Once the crullers are cool, dip the tops into the glaze, allowing any excess to drip off. Place them back on the wire rack until the glaze sets.
