Spinach Stuffed Pastry

Ingredients
  

1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach (washed and chopped)

1 cup ricotta cheese

1/2 cup feta cheese (crumbled)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

Salt and pepper to taste

1 egg (beaten for egg wash)

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon red pepper flakes (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Spinach Filling: In a skillet, heat olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until wilted. Remove from heat and let it cool slightly.

      Mix Ingredients: In a mixing bowl, combine the cooled spinach, ricotta cheese, feta cheese, Parmesan cheese, garlic powder, nutmeg, lemon juice, salt, pepper, and red pepper flakes (if using). Stir until the mixture is well combined.

        Roll Out Pastry: On a lightly floured surface, roll out the puff pastry sheet to smoothen it out slightly. Cut it into squares or circles (approximately 4x4 inches).

          Fill Pastry: Spoon a generous amount of the spinach filling onto the center of each pastry piece. Be careful not to overfill, as it can cause leakage during baking.

            Seal Pastries: Fold the pastry over the filling to create a triangle or half-moon shape. Press the edges tightly with a fork to seal or pinch with your fingers. Brush the tops with the beaten egg to give them a golden finish.

              Bake: Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until they are golden brown and puffed up.

                Cool and Serve: Remove from the oven and let them cool for a few minutes. Serve warm as a delicious appetizer or snack.
