2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms, sliced (such as cremini or button)

4 cups fresh spinach, roughly chopped

1 cup vegetable broth

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)

Juice of half a lemon

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Mushrooms: Toss in the sliced mushrooms and cook for about 5-7 minutes, until they are browned and tender.
