8 ounces rotini pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

3 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and garlic powder. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from skillet and set aside.

      Sauté Spinach: In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the chopped spinach and sauté until wilted, about 2-3 minutes.

        Make the Creamy Sauce: Lower the heat and add the softened cream cheese, sour cream, and Parmesan cheese to the skillet. Stir until creamy and well combined. If the mixture is too thick, add a splash of pasta water to loosen it.

          Combine: Add the cooked chicken and rotini pasta to the skillet, tossing everything together until evenly coated with the creamy spinach dip sauce. If desired, sprinkle in onion powder and red pepper flakes. Adjust seasoning with salt and pepper to taste.
