Spicy Tuna Sushi Stacks

Ingredients
  

For the Sushi Rice:

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

For the Spicy Tuna Mixture:

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha (adjust for spice level)

1 teaspoon soy sauce

1 teaspoon sesame oil

1 green onion, finely chopped

1 teaspoon sesame seeds (for garnish)

For Assembly:

Nori sheets, cut into strips

Avocado, sliced (optional)

Cucumber, sliced (optional)

Pickled ginger (to serve)

Instructions
 

Prepare the Sushi Rice:

    - Rinse the sushi rice under cold water until the water runs clear. Drain well.

      - Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If using a pot, bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until water is absorbed. Remove from heat and let sit for 10 minutes.

        - In a small saucepan, combine rice vinegar, sugar, and salt over low heat until sugar dissolves.

          - Transfer the cooked rice to a large bowl, drizzle the vinegar mixture over the rice, and gently fold it in with a spatula. Let cool to room temperature.

            Make the Spicy Tuna Mixture:

              - In a mixing bowl, combine the diced tuna, mayonnaise, Sriracha, soy sauce, sesame oil, and green onion. Fold gently to combine, ensuring the tuna is coated without mashing.

                Assemble the Sushi Stacks:

                  - Place a sushi ring mold (or a round cookie cutter) on a serving plate.

                    - Layer the ingredients in the mold starting with a few spoonfuls of sushi rice, pressing down gently.

                      - Next, add a layer of the spicy tuna mixture, followed by a layer of avocado and cucumber slices if using.

                        - Top the stack with another layer of rice, pressing down firmly. Carefully lift off the mold or cookie cutter.

                          - Repeat to create additional stacks, if desired.

                            Serve:

                              - Garnish each stack with a sprinkle of sesame seeds and additional chopped green onion.

                                - Serve immediately with nori strips and pickled ginger on the side.
