Spicy Szechuan Noodles

8 oz (225g) dried noodles (spaghetti or Szechuan noodles)

2 tablespoons vegetable oil

2 garlic cloves, minced

1-inch piece of ginger, grated

1 tablespoon Szechuan peppercorns

3 tablespoons soy sauce

1 tablespoon dark soy sauce

2 tablespoons chili oil

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon sugar

1/2 cup chopped scallions (green onions)

1/2 cup shredded carrots

1/2 cup sliced bell peppers (any color)

1 tablespoon crushed peanuts (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Noodles: Bring a pot of water to a boil. Add the dried noodles and cook according to package instructions until al dente. Drain and set aside, tossing with a little oil to prevent sticking.

    Prepare the Sauce: In a small bowl, mix the soy sauce, dark soy sauce, chili oil, rice vinegar, sesame oil, and sugar. Stir well until the sugar dissolves. Set aside.

      Sauté Aromatics: Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic, grated ginger, and Szechuan peppercorns. Stir-fry for about 1 minute until fragrant but not burnt.

        Add Veggies: Add the shredded carrots and sliced bell peppers to the skillet. Stir-fry for about 3-4 minutes until they are slightly softened but still bright in color.

          Combine Noodles & Sauce: Add the cooked noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss everything together, ensuring the noodles are well coated with the sauce.

            Finish with Scallions: Add the chopped scallions, and toss again for another minute to combine and heat through.

              Garnish & Serve: Remove from heat and plate the noodles. Garnish with crushed peanuts and fresh cilantro. Serve hot and enjoy your spicy Szechuan noodles!
