Ingredients

1 lb shrimp, deveined and peeled

1 ripe mango, peeled and diced

2 tablespoons olive oil

3 cloves garlic, minced

1 small red chili pepper, finely chopped (adjust to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon fresh lime juice

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, garlic, red chili pepper, ground cumin, smoked paprika, lime juice, salt, and pepper. Let it marinate for at least 15 minutes.

Prepare the Mango: While the shrimp is marinating, dice the mango and set aside. If you like a little extra heat, you can toss a pinch of chili powder onto the mango.

Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, until the shrimp turn pink and are opaque. Be careful not to overcook them.

Combine: Add the diced mango to the skillet in the last minute of cooking. Gently toss to combine and heat through.

Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve with lime wedges for a burst of freshness.

Enjoy your delicious Spicy Mango Shrimp over a bed of rice or mixed greens for a refreshing meal!
