Spicy Korean BBQ Cauliflower Bites

1 medium head cauliflower, cut into bite-sized florets

2 tablespoons vegetable oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon red pepper flakes (adjust to taste)

For the Spicy Korean Sauce:

¼ cup gochujang (Korean chili paste)

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon grated fresh ginger

For Garnish:

Toasted sesame seeds

Sliced green onions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with vegetable oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and red pepper flakes until well coated.

      Roasting the Cauliflower: Spread the cauliflower evenly onto the prepared baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, turning halfway through, until the florets are golden brown and tender.

        Make the Spicy Korean Sauce: While the cauliflower is roasting, whisk together the gochujang, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger in a small bowl until smooth and well combined.

          Combine Cauliflower and Sauce: Once the cauliflower is roasted, remove it from the oven and drizzle the spicy sauce over the florets. Toss gently to ensure each piece is coated with the spicy goodness.

            Final Bake: Return the sauced cauliflower to the oven and bake for an additional 5-7 minutes, allowing the sauce to caramelize slightly.
