Spicy Green Chile Taco Soup (Instant Pot)

A delightful twist on a classic dish.

Ingredients
  

1 pound ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chiles

1 can (4 oz) diced green chiles

2 cups beef or chicken broth

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper, to taste

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Shredded cheese (for serving)

Avocado, diced (for serving)

Tortilla chips (for serving)

Instructions
 

Sauté the Meat: Set your Instant Pot to the Sauté mode. Once hot, add olive oil. Then, add the ground meat and cook until browned. Break it up with a spatula as it cooks.

    Add Aromatics: Stir in the diced onion and minced garlic. Sauté until the onion is translucent, approximately 3-4 minutes.

      Combine Ingredients: Add in the black beans, corn, diced tomatoes with green chiles, diced green chiles, broth, cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine all ingredients.

        Pressure Cook: Close the Instant Pot lid and ensure the vent is set to sealing. Select Pressure Cook (or Manual) and set the timer for 10 minutes.

          Release Pressure: Once cooking is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release to let out any remaining steam.

            Serve: Open the lid and give the soup a gentle stir. Taste and adjust seasoning if needed. Serve hot in bowls, garnished with fresh cilantro, a dollop of sour cream, shredded cheese, diced avocado, and tortilla chips on the side.
