Spicy & Flavorful Chicken Tacos

1 lb (450g) boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Juice of 1 lime

8 small corn tortillas

1 cup diced tomatoes

1/2 cup chopped red onion

1/2 cup fresh cilantro, chopped

1 avocado, sliced

Sour cream or Greek yogurt, for serving

Lime wedges, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, chili powder, smoked paprika, cumin, cayenne pepper, garlic powder, onion powder, salt, and pepper. Stir in the lime juice. Add the chicken thighs, making sure they are fully coated in the spice mix. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. If using a skillet, add a little more olive oil. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes.

      Shred the Chicken: Use two forks to shred the cooked chicken into bite-sized pieces.

        Warm the Tortillas: Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable.

          Assemble the Tacos: Place a generous amount of shredded chicken in the center of each tortilla. Top with diced tomatoes, red onion, fresh cilantro, and avocado slices.

            Serve: Add a dollop of sour cream or Greek yogurt on top if desired, and serve with lime wedges on the side for squeezing over the tacos.
