Ingredients
  

8 oz. fettuccine or linguine pasta

1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package directions until al dente. Drain and set aside.

    Season the Chicken: In a mixing bowl, toss the chicken pieces with the Cajun seasoning until well coated.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant. Then add the sliced bell peppers and cook for another 5 minutes, until softened.

          Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer, then add the cherry tomatoes. Cook for about 5 minutes until the sauce thickens slightly.

            Combine: Return the cooked chicken to the skillet. Add the drained pasta and half of the grated Parmesan cheese. Toss everything together until the pasta is coated in the creamy sauce. Season with salt and pepper to taste.

              Serve: Plate the pasta and sprinkle the remaining Parmesan cheese on top. Garnish with sliced green onions and chopped fresh parsley before serving.
