Ingredients
  

2 cups water

2 cups milk (whole, almond, or oat milk for a dairy-free option)

2 black tea bags (Assam or Darjeeling work well)

1 cinnamon stick

4 green cardamom pods, crushed

3 whole cloves

1/2 inch piece of fresh ginger, sliced

1-2 tablespoons honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

A pinch of black pepper (optional, for a slight kick)

Whipped cream or foam (optional, for topping)

Ground cinnamon (for garnish)

Instructions
 

In a medium saucepan, combine the water, cinnamon stick, crushed cardamom pods, cloves, and sliced ginger. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low and let the spice mixture simmer for about 10 minutes. This allows the spices to infuse their flavors into the water.

      Add the black tea bags to the saucepan and simmer for an additional 3-5 minutes, depending on how strong you like your tea.

        Remove the saucepan from heat and strain the spice and tea mixture into a separate container using a fine-mesh sieve or cheesecloth to discard the solids.

          Return the strained liquid to the saucepan, add the milk, honey or maple syrup, and vanilla extract. Stir to combine.

            Heat the mixture over medium heat until it’s warm but not boiling. (Watch it closely as milk can easily scorch.)

              Once heated, froth the chai latte using a milk frother, blender, or by vigorously whisking until it’s light and foamy.

                Pour the spiced chai latte into mugs. Top with whipped cream or foam, if desired, and sprinkle with ground cinnamon for garnish.
