12 oz spaghetti

2 cups fresh spinach, washed and chopped

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 small onion, finely diced

2 garlic cloves, minced

1 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper to taste

1 tsp crushed red pepper flakes (optional)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for 2-3 minutes, allowing them to caramelize slightly.

        Make the Cream Sauce: Pour in the heavy cream, whisking continuously. Bring to a gentle simmer, then add the grated Parmesan cheese, stirring until melted and smooth.

          Stir in Spinach: Gradually add the chopped spinach to the sauce, stirring until it wilts down into the sauce. Season with salt, pepper, and crushed red pepper flakes if using.

            Combine Pasta and Sauce: Add the cooked spaghetti to the skillet, tossing to coat well with the sauce. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.
