8 ounces spaghetti

2 cups fresh spinach, washed and dried

1 cup sun-dried tomatoes (jarred in olive oil), chopped

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves (for garnish)

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for another 2-3 minutes, allowing the flavors to mingle.

        Incorporate Cream: Pour in the heavy cream and season with salt and black pepper. Stir well and let it simmer for about 4-5 minutes until the sauce thickens slightly.

          Add Spinach: Gently fold in the fresh spinach, allowing it to wilt into the sauce. If the sauce becomes too thick, gradually add a bit of the reserved pasta water until you reach your desired consistency.

            Combine with Spaghetti: Add the cooked spaghetti to the skillet and toss well to coat the pasta with the sauce. If necessary, adjust seasonings to taste.

              Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
