Ingredients
  

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 cup buttermilk

1/4 cup unsalted butter, melted

1/2 cup corn kernels (fresh or frozen)

1/4 cup chopped green onions (optional)

1/4 cup honey

1/2 cup unsalted butter, softened (for honey butter)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the eggs and then whisk in the buttermilk and melted butter until the mixture is smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in corn kernels and green onions (if using) for added flavor and texture.

          Fill the Muffin Tin: Spoon the cornbread batter into the prepared mini muffin tin, filling each cup about 3/4 full.

            Bake: Bake in the preheated oven for 12-15 minutes or until a toothpick inserted in the center comes out clean.

              Prepare Honey Butter: While the poppers are baking, prepare the honey butter by combining softened butter and honey in a bowl. Mix until well combined and creamy.

                Cool & Serve: Once the poppers are done, remove them from the oven and let them cool for a few minutes. Serve warm with a generous dollop of honey butter on top.
