Ingredients
  

1 lb lump crab meat

1 cup all-purpose flour

1/2 cup cornmeal

2 tbsp chopped green onions

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 egg, beaten

1 tsp Old Bay seasoning

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Oil for frying

Optional: Hot sauce for serving

Instructions
 

In a large mixing bowl, gently combine the lump crab meat, green onions, mayonnaise, Dijon mustard, beaten egg, Old Bay seasoning, garlic powder, salt, and black pepper, being careful not to break up the crab too much.

    In another bowl, combine the all-purpose flour and cornmeal. Gradually fold this mixture into the crab mixture until just combined. The batter should be thick but still allow for spooning.

      Heat about 2 inches of oil in a large deep frying pan over medium heat until it reaches 350°F (175°C).

        Using a tablespoon, carefully drop spoonfuls of the crab batter into the hot oil, being sure not to overcrowd the pan. Fry until each beignet is golden brown, approximately 3-4 minutes per side.

          Use a slotted spoon to remove the beignets and drain them on paper towels.

            Serve warm with hot sauce on the side for an extra kick.
