1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup granulated sugar (for rolling)

36 milk chocolate Kisses (unwrapped)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the Wet Ingredients: In a large mixing bowl, combine the peanut butter, softened butter, granulated sugar, and brown sugar. Beat with a mixer on medium speed until well blended. This should take about 2-3 minutes.

      Add Eggs and Vanilla: Add in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until incorporated. Be careful not to overmix.

          Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes to allow it to firm up, making it easier to roll.

            Form the Cookies: Once chilled, use a tablespoon or a cookie scoop to portion out the dough. Roll each portion into a ball, then roll each ball in the extra granulated sugar until fully coated.

              Bake the Cookies: Place the sugar-coated balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.

                Add Chocolate Kisses: As soon as the cookies come out of the oven, press a chocolate Kiss into the center of each cookie while they are still warm. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
