Ingredients
  

2 1/4 cups all-purpose flour

2 tsp ground ginger

1 tsp ground cinnamon

1/2 tsp ground cloves

1/2 tsp baking soda

1/4 tsp salt

3/4 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup unsulfured molasses

1 large egg

1 tsp vanilla extract

1/4 cup granulated sugar (for rolling)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes using an electric mixer.

        Add the molasses, egg, and vanilla extract, mixing until well combined.

          Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Be careful not to over-mix.

            Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Roll each ball in granulated sugar before placing them on the baking sheet for an extra sparkle.

                Bake in the preheated oven for 8-10 minutes, or until the edges are slightly firm but the center remains soft. They may look underbaked, but they'll continue to cook as they cool.

                  Remove from the oven and let cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
