1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

½ teaspoon baking soda

1 cup granulated sugar (for rolling)

2 tablespoons ground cinnamon (for rolling)

For the Cinnamon Sugar:

1 cup granulated sugar

2 tablespoons ground cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time and then stir in the vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, salt, and baking soda.

          Mix Dry with Wet: Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes to firm up, making it easier to shape.

              Prepare Cinnamon Sugar: In a small bowl, mix together 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Set aside.

                Shape the Cookies: Once the dough is chilled, scoop about 1 tablespoon of dough and roll it into a ball. Roll the ball in the cinnamon sugar mixture until fully coated.

                  Place on Baking Sheet: Arrange the cookie dough balls on the prepared baking sheet, leaving space between them (they will spread a bit).
