4 cups all-purpose flour, plus extra for dusting

1 packet (2 1/4 tsp) instant yeast

1/4 cup granulated sugar

1 teaspoon salt

1 cup whole milk, warmed (about 110°F)

1/4 cup unsalted butter, melted, plus extra for brushing

2 large eggs, at room temperature

1/4 teaspoon garlic powder (optional, for a subtle flavor)

1 tablespoon fresh herbs (like rosemary or thyme), finely chopped (optional)

Sea salt, for sprinkling on top

Activate the Yeast: In a mixing bowl, combine the warm milk and sugar. Sprinkle the instant yeast over the top and let it sit for about 5 minutes until it becomes frothy.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, salt, and garlic powder (if using).

      Combine Wet Ingredients: Add the melted butter and the eggs to the yeast mixture, whisking until blended.

        Make the Dough: Gradually add the wet mixture to the dry ingredients, stirring until a sticky dough begins to form. If using fresh herbs, fold them in at this stage.

          Knead the Dough: Transfer the dough to a floured surface and knead it for about 8-10 minutes until smooth and elastic. It should be slightly tacky but not sticky. Add flour as necessary to prevent sticking.

            First Rise: Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 to 1.5 hours, or until doubled in size.

              Shape the Rolls: Punch down the dough and turn it out onto a floured surface. Divide the dough into 12 equal pieces and shape each piece into a ball. Arrange the balls in a greased 9x13-inch baking dish, spacing them evenly.

                Second Rise: Cover the shaped rolls with the damp cloth, and let them rise again in a warm spot for 30-45 minutes, or until they puff up nicely.

                  Preheat the Oven: Preheat your oven to 350°F (175°C) during the last 15 minutes of the second rise.
