Smothered Baked Chicken Burritos

2 cups cooked shredded chicken (rotisserie is great!)

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (optional)

For the Sauce:

1 cup salsa (mild or hot, depending on preference)

1 cup sour cream

1 teaspoon lime juice

Salt and pepper to taste

For Assembly:

6 large flour tortillas

Extra cheese for topping (about 1 cup)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Make the Filling: In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes, cumin, smoked paprika, salt, pepper, and half of the shredded cheese. Stir until everything is well mixed.

      Prepare the Sauce: In another bowl, mix the salsa, sour cream, lime juice, and a pinch of salt and pepper. Set aside.

        Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the chicken filling onto the center of the tortilla, then fold in the sides and roll it up tightly. Repeat this process for all tortillas.

          Arrange in Baking Dish: Place the assembled burritos seam-side down in a greased 9x13-inch baking dish.

            Add Sauce: Pour the sauce evenly over the burritos, making sure to cover them completely. Sprinkle the remaining cheese on top of the sauce.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro if desired. Serve warm with extra salsa or sour cream on the side.
