2 cups cooked shredded chicken

1 cup cooked brown rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

1 cup shredded Mexican blend cheese

1 cup salsa (your choice of heat)

1 cup sour cream

1 cup enchilada sauce

Fresh cilantro, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix the Filling: In a large mixing bowl, combine the shredded chicken, cooked brown rice, black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Fill the Tortillas: Lay out the tortillas on a clean surface. Spoon an equal amount of the chicken filling onto the center of each tortilla. Sprinkle with a little cheese, then fold in the sides and roll tightly from one end to the other.

        Prepare for Baking: Place the filled burritos seam-side down in a greased 9x13-inch baking dish.

          Pour the Sauce: In a separate bowl, mix the salsa and enchilada sauce together. Pour the sauce over the burritos, ensuring they are well-coated.
