8 oz elbow macaroni

2 cups whole milk

1 cup heavy cream

1 cup smoked Gouda cheese, shredded

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot over medium heat, melt the butter. Stir in the flour and cook for about 1-2 minutes to form a roux, whisking constantly to avoid lumps.

      Add Milk and Cream: Gradually whisk in the whole milk and heavy cream. Continue to whisk until the mixture is smooth and begins to thicken, about 5 minutes.

        Incorporate the Cheese: Reduce heat to low and add the cream cheese, smoked Gouda, and sharp cheddar to the pot. Stir until all the cheeses are melted and the sauce is creamy. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir until the pasta is well-coated with the cheesy goodness.

            Optional Breadcrumb Topping: If you like a crunchy topping, preheat your oven to 350°F (175°C). Transfer the mac and cheese to an oven-safe dish. Sprinkle breadcrumbs evenly over the top, then bake for 20 minutes, or until the top is golden and crispy.

              Serve and Garnish: Remove from the oven, if baked. Garnish with chopped parsley before serving for a fresh touch.
