2 lbs (900g) lamb shoulder, boneless and cut into large chunks

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup vegetable or chicken broth

1 cup pitted olives (Kalamata or green)

2 teaspoons dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Zest and juice of 1 lemon

Instructions
 

Sear the Lamb: In a large skillet, heat the olive oil over medium-high heat. Add the lamb chunks, seasoning them with salt and pepper. Sear until browned on all sides, then transfer to the slow cooker.

    Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

      Combine Ingredients: Add the sautéed onion and garlic to the slow cooker with the browned lamb. Add the cherry tomatoes, broth, olives, dried oregano, ground cumin, and smoked paprika. Stir well to combine all ingredients.

        Slow Cook: Cover the slow cooker and set it to low. Cook for 6-8 hours or until the lamb is tender and easily shreds with a fork.

          Finish & Serve: Once cooked, stir in the lemon juice and zest for a fresh finish. Garnish with fresh parsley before serving.
