Slow Cooker Tomato Tortellini Soup with Ground Beef

A delightful twist on a classic dish.

Ingredients
  

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

2 cups water

1 tsp dried oregano

1 tsp dried basil

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

2 cups frozen cheese tortellini

1 cup fresh spinach leaves

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer to the slow cooker.

    Add diced onion and minced garlic to the slow cooker with the ground beef. Stir in the crushed tomatoes, beef broth, and water.

      Sprinkle in oregano, basil, Italian seasoning, red pepper flakes (if using), and season with salt and pepper to taste. Mix well.

        Cover the slow cooker and cook on low for 6 hours or on high for 3 hours.

          About 15 minutes before serving, stir in the frozen tortellini and fresh spinach. Cover again and allow to cook until the tortellini is tender.

            Taste and adjust the seasoning if necessary.

              Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
