2 pounds beef tips (chuck or sirloin), cut into 1 to 1.5-inch pieces

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup beef broth

1 cup red wine (or additional beef broth for non-alcoholic)

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

2 cups mushrooms, sliced (button or cremini)

1 cup carrots, sliced (about 2 medium-sized)

2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Beef: Season the beef tips with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the beef tips in batches, searing them on all sides until they are browned (about 3–4 minutes per batch). Transfer the seared beef tips to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3–4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: Pour in the beef broth and red wine (if using), scraping up any bits stuck to the bottom of the skillet. Stir in the Worcestershire sauce, soy sauce, thyme, and rosemary. Bring the mixture to a slight simmer.

        Add Vegetables: Pour the aromatic mixture over the beef tips in the slow cooker. Add the sliced mushrooms and carrots, stirring to ensure everything is well combined.
