Slow Cooker Salisbury Steak Meatballs

Ingredients
  

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped parsley

1 large egg

1 tsp garlic powder

1 tsp onion powder

1 tsp Worcestershire sauce

Salt and pepper to taste

1 cup beef broth

1 cup sliced mushrooms

1 medium onion, finely chopped

1 cup ketchup

1/4 cup soy sauce

1 tbsp cornstarch

2 tbsp water

In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Shape the mixture into meatballs, about 1.5 inches in diameter, and set aside.

      Heat a skillet over medium-high heat and add a splash of oil. Sear the meatballs in batches until browned on the outside (about 2-3 minutes each side). Remove and transfer to the slow cooker.

        In the same skillet, sauté the chopped onion and sliced mushrooms until softened. This should take about 5 minutes.

          In a small bowl, mix together the beef broth, ketchup, soy sauce, and any remaining Worcestershire sauce. Pour this mixture over the meatballs in the slow cooker. Top with the sautéed onions and mushrooms.

            Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.

              Once cooked, mix the cornstarch with water to form a slurry. Stir this into the slow cooker to thicken the sauce, cooking for an additional 15-30 minutes.

                Serve the meatballs over mashed potatoes or rice, drizzled with the rich gravy.
