2 lbs bone-in, skin-on chicken thighs

1/2 cup honey

1/4 cup soy sauce (low-sodium recommended)

1/4 cup rice vinegar

5 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (adjust to taste)

1 tablespoon cornstarch (optional, for thickening sauce)

2 tablespoons water (for cornstarch slurry)

Chopped green onions and sesame seeds for garnish

Prepare the Chicken: Pat the chicken thighs dry with paper towels and place them into the slow cooker, skin side up.

    Mix the Sauce: In a mixing bowl, combine honey, soy sauce, rice vinegar, minced garlic, minced ginger, sesame oil, and red pepper flakes. Whisk until well combined.

      Add Sauce to Chicken: Pour the sauce mixture over the chicken thighs, ensuring they are nicely coated.

        Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked (internal temperature should reach 165°F).

          Optional Thickening (if desired): About 30 minutes before serving, if you prefer a thicker sauce, remove chicken thighs temporarily. Mix cornstarch and water in a small bowl to create a slurry, then stir it into the sauce in the slow cooker. Return the chicken to the pot and cook for an additional 30 minutes.

            Serve: Once the chicken is done, carefully remove it from the slow cooker. Drizzle with the cooked sauce, and garnish with chopped green onions and sesame seeds.
