2 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 medium onion, chopped

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup beef broth

2 tablespoons soy sauce

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the beef stew meat and sear until browned on all sides, about 5-7 minutes. This step adds flavor but can be skipped if you're short on time.

    Transfer the browned beef to the slow cooker. Add the halved baby potatoes and chopped onion to the cooker.

      In the same skillet, melt the remaining butter and add the minced garlic. Sauté for 1-2 minutes until fragrant.

        Add the thyme, smoked paprika, salt, and pepper to the garlic butter mixture. Stir well, then pour it over the meat and potatoes in the slow cooker.

          Pour in the beef broth and soy sauce, ensuring everything is well combined.

            Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the beef is tender and potatoes are cooked through.

              Once done, taste and adjust seasoning if necessary. Garnish with freshly chopped parsley before serving.
