2 cups canned chickpeas, drained and rinsed

1 large onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes

2 tablespoons tomato paste

2 tablespoons tikka masala spice blend (adjust to taste)

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon garam masala

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

1 cup baby spinach (optional)

1 cup cooked basmati rice (for serving)

Instructions
 

Prep the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 5 minutes, or until translucent. Add the garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Combine Ingredients: In your slow cooker, combine the sautéed onion mixture, chickpeas, coconut milk, diced tomatoes, tomato paste, tikka masala spice blend, ground cumin, turmeric, garam masala, salt, and pepper. Stir well to combine.

      Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. If you'd like to add spinach, stir it in during the last 30 minutes of cooking to allow it to wilt without overcooking.
