Ingredients
  

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (14.5 oz) cans diced tomatoes, undrained

2 cups vegetable broth

1 tsp dried basil (or 1/4 cup fresh basil, chopped)

1 tsp sugar

Salt and pepper, to taste

1 cup heavy cream (or coconut milk for a dairy-free option)

Fresh basil leaves, for garnish

Instructions
 

In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1–2 minutes, until fragrant.

    Transfer the sautéed onion and garlic to the slow cooker. Add the diced tomatoes (with their juices), vegetable broth, dried basil, sugar, salt, and pepper. Stir to combine.

      Cover the slow cooker and cook on low for 6–8 hours, or on high for 3–4 hours.

        Near the end of the cooking time, stir in the heavy cream or coconut milk. Blend the soup using an immersion blender until smooth, or carefully transfer it to a blender in batches.

          Taste and adjust seasoning if necessary. If the soup is too thick, add more broth to reach your desired consistency.

            Serve hot, garnished with fresh basil leaves. Enjoy with crusty bread or grilled cheese!
