Ingredients

4 boneless, skinless chicken breasts

1 can (15 oz) crushed tomatoes

1 medium onion, diced

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tsp dried basil (or 1 tbsp fresh basil, chopped)

1 tsp dried oregano

1 tsp sugar (to balance acidity)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Optional: 2 cups fresh spinach or kale for added nutrition

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Place them at the bottom of the slow cooker.

Mix the Sauce: In a mixing bowl, combine the crushed tomatoes, diced onion, minced garlic, chicken broth, dried basil, dried oregano, and sugar. Stir until well combined.

Combine Layers: Pour the tomato mixture over the chicken in the slow cooker, ensuring the chicken is well covered.

Add Spinach/Kale: If using, add the fresh spinach or kale on top of the tomato mixture.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

Creamy Finish: About 30 minutes before serving, carefully remove the chicken breasts and set them aside. Stir the heavy cream and Parmesan cheese into the slow cooker sauce.

Shred the Chicken: Use two forks to shred the chicken breasts into bite-sized pieces, then return the shredded chicken to the creamy sauce. Stir to coat.

Serve and Garnish: Ladle the creamy tomato basil chicken over cooked pasta or rice. Garnish with fresh basil leaves and additional Parmesan cheese if desired.
