Ingredients
  

1 pound ground beef

1 cup diced onion

1 cup diced bell pepper (any color)

3 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chiles

1 cup frozen tater tots

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped fresh cilantro (for garnish, optional)

Sour cream for serving (optional)

Instructions
 

Brown the Beef: In a skillet over medium-high heat, cook the ground beef until it’s browned and cooked through. Drain any excess fat.

    Sauté Veggies: Add the diced onion, bell pepper, and garlic to the skillet. Sauté for about 5 minutes until the vegetables are tender.

      Combine Ingredients: In the slow cooker, add the cooked beef and vegetables, black beans, corn, diced tomatoes with green chiles, chili powder, cumin, smoked paprika, salt, and pepper. Stir everything together well.

        Layer Tater Tots: Evenly spread the frozen tater tots over the mixture in the slow cooker.

          Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the tater tots are cooked through and golden.

            Add Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top, and cover again to allow the cheese to melt.

              Serve: Once the cheese is melted and bubbly, serve the cowboy casserole hot, garnished with chopped cilantro and a dollop of sour cream, if desired.
