Slow Cooker Cowboy Casserole

1 lb ground beef (or ground turkey for a lighter version)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

2 cups frozen mixed vegetables (corn, peas, carrots)

2 cups diced potatoes (you can use frozen hash browns for convenience)

1 (15 oz) can of diced tomatoes with green chilies

1 (15 oz) can of black beans, drained and rinsed

1 cup beef broth (or vegetable broth for a vegetarian option)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese (plus more for topping)

½ cup sour cream (optional, for serving)

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Brown the Meat: In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess fat. Add the chopped onion, garlic, and bell pepper, and sauté for about 5 minutes until the vegetables are softened.

    Prepare the Slow Cooker: Transfer the browned meat mixture to a large slow cooker. Add the frozen mixed vegetables, diced potatoes, diced tomatoes with green chilies, black beans, and beef broth.

      Season: Sprinkle in the chili powder, cumin, salt, and black pepper. Stir everything together until well combined.

        Cook: Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours. If using frozen hash browns, they can be added in the last 2 hours of cooking if you prefer them less mushy.

          Add Cheese: Approximately 15 minutes before serving, sprinkle the shredded cheddar cheese on top. Cover again and allow the cheese to melt.

            Serve: Once cooked, give the casserole a good stir and taste to adjust seasoning if necessary. Serve hot, topped with additional cheese, a dollop of sour cream, and a sprinkle of fresh cilantro or green onions if desired.
